Just the sea offers a very special one: the anchovies of Menaica. An anchovy is caught at sunset with a typical net, which selects only the biggest and most darting specimens, the Menaica precisely. The intense flavor is the result of a fast processing and a seasoning in brine of at least 3 months.
Let's move from the sea to the land with Acquasale Cilentana made only with toasted bread crumbs, cherry tomatoes and salt. A fresh and quick dish to which someone (but not everyone) combines a good buffalo mozzarella DOP, produced in the nearby Capaccio-Paestum.
Even pizza tastes different here: in these parts they use the same dough used to make bread, with mixed flours of soft wheat and durum wheat semolina. Compared to Neapolitan pizza, it is slightly thinner and crispier and is served in a basket. A Cilento specialty to be eaten near the sea.
Another typical and extraordinary product is the white fig, already appreciated in ancient times and today used by chefs in both sweet and savory dishes. It has digestive and diuretic properties much higher than the common red fig. Moreover it is rich in sugars and fibers and it was loved by erudites of ancient Rome such as Marco Porcio Catone or Marco Terenzio Varrone.
